Makes 3 regular-sized waffles
4 oz. - cream cheese, softened
1 tbsp. - unflavored grass-fed beef gelatin
1 tbsp. - vanilla whey protein powder
1 - large egg, room temperature
1/4 tsp. - baking soda

Turn on the waffle maker to preheat
Place cream cheese in a large bowl and mix to ensure even temperature distribution
Slowly add gelatin while mixing to avoid clumping
Add whey powder and mix until well combined
Add 1 egg and mix for at least 3 minutes to ensure a homogenous mixture
Add the baking soda to the batter once your waffle maker is ready and mix until well combined (about 30 seconds)
Let stand before adding to the waffle maker (about 1 minute)
Cook for 3 - 5 minutes in a waffle maker. Serve immediately, or store in air air-tight container and reheat in a toaster or broiler.
